Summer evenings bring a plethora of opportunities – from spending time with your family to going out with friends and relaxing. Since summer days are hot and most people are forced to stay indoors to escape the heat, everyone waits for the evenings, as they are comparatively cold.

Summer evenings also crave for street food and chaat.

Ingredients:

For the dumplings:

  • Spinach leaves - 12 leaves
  • Green chili chopped - 1no
  • Besan (gram flour) - 1 cup
  • Ginger chopped - 1 tsp
  • Salt - as per taste
  • Water - 1 cup
  • Turmeric - half tsp
  • Oil - for frying
  • chili powder - 1tp
  • Chaat masala - a pinch

For Sweet Yogurt:

  • Curd - 1 cup
  • Sugar - 3 tbsp
  • Salt - as per taste
  • Black salt - 1/4 tsp
  • Tamarind Chutney:
  • Tamarind pulp - 1 cup
  • Sugar - 4 tbsp
  • Chili powder - 1 tsp
  • Roasted cumin powder - 1 tbsp
  • Salt - as per taste
  • Black salt - 1 tsp
  • Salt - as per taste
  • Water - 11/2 cups
  • Grapes - 1 cup
  • Banana - 1 any
  • Watermelon seeds - a handful

Toppings:

  • mint chutney

The process to make : 

Step1: Wash and dry the spinach leaves. In a separate bowl, add gram flour, salt, turmeric, red chili powder, green chili, ginger, and water, and whisk to make a batter.

Step2: Then dip the spinach leaves in the batter and deep fry them in oil. Keep the pakoras aside.Mix the ingredients for making sweet curd and keep aside.

Step3: In a pan, combine all the ingredients for making tamarind chutney except grapes, banana and melon seeds – bring the mixture to a high boil.

Step4: Bring the mixture to a boil for about 15-18 minutes and cook till the chutney is cooked. Keep it aside and let it cool.

Step5: Then add chopped grapes, sliced banana and melon seeds. To chutney.

Step6: Then take out the spinach leaves in a plate.

Step7: Drizzle sweet curd and tamarind chutney, chaat masala and mint chutney. serve immediately.
